Sausage Tortellini Soup

A super easy recipe for a really good soup. I got this recipe from Pinterest and modified it a little, it is now one of The Hub’s favorite meals! 

Seriously though, this is one you gotta try! 

(sorry about picture quality. A friend is borrowing my camera so I used the iPad)

1 lb of sausage
1 can of Evaporated Milk
6 Chicken Bouillon Cubes 
4 cups water
1 bag of Cheese Tortellini 
1 tbsp Parsley
1 tbsp Oregano
salt & pepper to taste
Parmesan Cheese

First cook the sausage all the way, then drain any grease. 

Next, bring the 4 cups of water to a boil. Once boiling add the 6 chicken bouillon cubes and stir until they are dissolved. 
After the cubes are dissolved, turn heat to medium high and add the evaporated milk, all seasonings and sausage. Allow to simmer for 15 minutes. (really bad picture on this one. Sorry)

After the mixture has simmered for 15 minutes then add tortellini and allow to boil according to pasta pkg. instructions. 

 Sprinkle with parmesan cheese and serve. It is very hearty and makes a lot! Great soup to serve when you have lots of guests!

I never do my make-up in the bathroom. I guess I am just too lazy to stand up and get ready in the mornings. I usually always sit on our bed and use a tiny mirror or sit on the couch downstairs. So I decided to put an end to that problem and made myself a little vanity!

I got the mirror for $10 at a garage sale a year ago and the table is an old t.v. tray that was $8 at Wal-Mart that I painted white.

I love my little corner and it sure beats the edge of my bed and a tiny mirror.

I have been taking a slight break from blogging because I am in my last 2 weeks of school before break and things get crazy. Not to mention it is Christmas time and things get even crazier then. I am not giving up forever just have very little creative inspiration outside of writing about Developmentally Appropriate Practices for young children. So for now, don’t expect any new posts but I will be back!


Guidelines are defined by as: any guide or indication of a future course of action. Last semester I really struggled with motivation in school as well as keeping myself disciplined. 

I know that part of it had to do with the fact that I am a senior and have major senioritis. 

Also I got married over the summer and now I live with a really hot guy who I happen to LOVE spending time with 🙂 
This hot guy also came with a flat screen t.v. and instant stream Netflix. 
All of these things mixed together made for a really unproductive me. 
I made pretty good grades but I could have done better. 
I was tired of school, tired of the same ol’ kinds of classes and just had no motivation to get anything done. 

Another huge problem was that I stayed up late watching t.v. then I would do my homework right before bed.
I was dead tired but the work had to be done so I lazily finished it.
Almost every night was like this and I ended up staying up really late almost every single night.

As you can imagine these late nights turned into late mornings as well. 
No, not late to class because I am never late to class. 
But late as in pushing-the-snooze-button-until-the-last-possible-hour-I-can-get-up-and-be-on-time late. 
I rushed around getting ready, skipped showering a couple mornings (gross I know) didn’t eat breakfast and then rushed off to class feeling gross and really tired.

I started to really hate school because I had done this to myself and I was not enjoying any of it at all. 
I hated feeling that way but it was kind of a vicious cycle and I just kept losing motivation and procrastinating. 
So I made a decision to change.

This is my last semester of classes before I begin my student teaching and I want to learn as much as possible as I get closer to my dream.
I don’t want to feel tired, run-down and unmotivated.
I want to enjoy school and do the best that I can.
So I made myself some guidelines for this semester. 
I sat down by myself, no distractions and thought about what I need to do to make this semester go better.
Below is what I came up with.

Morning Guidelines
6:00am – Wake-up/Shower/Get Ready
7:00am – Coffee/Breakfast/Bible
7:40am – Leave for Class
Night Guidelines
10:30pm – Get bag ready/Lay out clothes (school & work)/Get ready for bed
11:00pm – In bed/Read, SLEEP!

I have only been using these new guidelines for a couple of days but I have already noticed a huge change in the way I feel! 
I really enjoy the mornings.
I give myself almost two whole hours to get ready.
No rushing around at all. It is a quiet relaxing time.
My favorite part is coming down stairs (Mavis and Melvin right behind me) and making coffee and breakfast then sitting on the couch, reading the Bible and just relaxing. 
It is so nice to have that time with God and to myself.
It all makes me feel more awake throughout the day.

Nights have been a little harder to adjust to.
Collin works night hours at the newspaper so I am all alone and don’t have him as a distraction but in the same sense I don’t have him to hold me accountable.
I told myself I have to do any homework first, but after that it is time I can do anything I want.
I usually do watch t.v. or read blogs but it is nice to know my homework is done.
I get my book bag ready and lay out my clothes while listening to music in our room. 
Then I get ready for bed, hop in and read. (Right now I am reading this book)
I usually read about 30 minutes then I am off to dream land!

I know that later in the semester there will be nights that I have to stay up later and I will be overwhelmed with work.
I won’t be able to stick to such a strict schedule.
But that is why I titled them as guidelines. 
I have already seen what a change this has made in me this semester and I intend to stick with it!

Back to School, Back to School…

… to prove to mom I’m not a fool!

I go back to school next week and I have VERY mixed emotions. I have always liked school, mainly for the social aspect (well maybe not so much in College cause I pretty much never talk in my classes) but I also do enjoy learning. Break was so good though and it was nice to have so much free time to do whatever I wanted to! I was trying to get myself motivated and made a sort of pro/con list about going back to school.


1. This semester will put me one step closer to achieving my most sough-after dream of becoming a teacher!

2. I will have a routine and a consistant schedule, which I love!

3. I get to meet (and fall madly in love with) a new group of kiddos and learn so much by helping in their classroom!

4. I will feel like I have a purpose in life other than sitting around watching t.v. and stuffing my face 😉

5. Knowledge is power!


1. Homework a.k.a the bane of my existence. 

2. Waking up at the butt-crack of dawn every morning. 

3. Busy, busy, busy, busy. 17 hours at school, 30 hours a week at work, not to mention laundry, cooking, caring for animals and spending time with The Hubs and friends. 

So as you can see the pros outweigh the cons, so I guess it’s official! I am excited to go back to school! I would greatly appreciate prayers for motivation though because it is also official that I have a MAJOR case of senioritis. 

New Years Resolutions

Resolutions are the norm for the start of a new year, I have never really jumped on the band wagon but this year I actually made resolutions for the new year.

1. Spend more time with my friends. I have been terrible at making time for friends this past year and I want to make more of an effort. I am starting the year off right with a fun girls night at our house Monday (post to follow of course)

2. Be more conscious about what I put into my body. I eat a lot of junk food, especially sweets and it is really taking a toll on my energy level and body in general. I am not cutting out all sweets but I am not allowing them to be snacks anymore. Fruit and veggies here I come!

3. Read more books for leisure. I love to read and in high school I was always reading a book, I read every night before bed. Now that I am in college my workload has increased, not to mention I work 30 hours a week. I am doing good on this one because I just started a new book have have been reading just about every day.
